Psar Chaa, the Old Market, in the center of Siem Reap has what any other market in Southeast Asia might have – meat, produce and early-rising locals catching breakfast – but like every market it has its own personality reflecting the everyday needs of the locals. Things get going between 6:00-6:30 a.m. when many have their breakfast (noodle soup, rice soup, duck on rice and so forth) before heading to work.  By midday the food portion of the market is a bit sad and stenchy. Psar Chaa feels more cramped than most and I often felt in the way of people doing real shopping, but I was happy to see something I hadn’t before: water lily stems, the long and slender, light-pink stems that slightly resemble young rhubarb. I’m still waiting to see them in a dish.
