Chicken Sign at Kampot Rapids
Kampot, Cambodia – Outside of Kampot proper, local Khmers cool off in river rapids. Khmers, like Lao and Thai people, are a bit more modest so when it comes to swimwear they often dive in fully clothed. When I visited the rapids, neither swimming in jeans shorts and a t-shirt nor being the lone girl wearing a bikini seemed appealing. Instead, I just dipped my feet in the cool water and then took a plunge into lunch. This midday meal was a golden chicken spit-roasted to order and dressed with morning glory, onions and ginger with a sweet and spicy dipping sauce on the side. Though the bird clearly had a working life, the meal was tasty and well worth the wait.
