On an Overcast Morning, Making the Extra Effort
April 7th, 2009Kuay Jaap
Nong Khai, Thailand – After making my way from Khorat in central Issan to Nong Khai, I found myself gazing at Laos across the Mekong from my guesthouse’s garden. With the smell of bacon in the air, I had to resist getting breakfast there in the garden, where most of the guests were taking theirs, but quickly found a meal around the corner at 75 Kaeworawut Road. It was a bowl of noodle soup, but this one was kuay jaap, the rolled rice noodles, with thin curls of chicken and loads of boiled egg wedges in a salty-savory broth. The eggs adding a nice yolky richness, making for a delicious, hearty breakfast on an overcast morning.
