Kuay Jaap (Rolled Rice Noodle Soup)
Bangkok, Thailand – It’s always best to eat certain dishes at spots that specialize in them. I had kuay jaap (rolled noodle soup) a few nights ago at a noodle place that serves everything from phad thai to kuay jaap to spaghetti. On the recommendation of a Bangkok local, Kunnaya, today I hit a lunch spot on Soi Saphun Khu that does two dishes – kuay jaap and crispy pork over rice. I got a little crispy pork in my soup. This one had dark, musky broth with pieces of intestines, a boiled egg quarter and cilantro stems mixed in. I pepped it up with all the table’s condiments – fish sauce for roundness, sugar for balance, chile vinegar for acid, dry chile for heat and white pepper for kick. For whatever reason, white pepper always seems to be in the condiment mix for kuay jaap spots, but not necessarily at other kuay tiaw (rice noodle soup) stalls.
