Hanoi, Vietnam – My first day in Hanoi, I woke up in a complete haze. I had somehow managed to stay out until 5 a.m. drinking the local draft beer, bia hoi. I really needed breakfast and headed towards the nearest noodle joint to grab a bowl of pho, tender rice noodles with beef. I spent the rest of my day wandering the honking hot streets of Hanoi, wandering into the market, jumping out of the way of the ever steady stream of motorbikes and resting on plastic chairs set up on the sidewalks as a makeshift bar serving that bia hoi. Fueling me through this was bahn my, the Vietnamese pork pate sandwich on a crusty loaf of bread, as well as nem, the pork spring rolls fried out on the sidewalk. As dark hit and rain started to fall, I squatted on a plastic stool on the sidewalk to scoop up some banh cuon, pork-stuffed rice crepes. It was time to head to Sapa.
