Pork Ribs with Fried Lemongrass
Hanoi, Vietnam – As the day’s light starts to fade, Hang Buom starts to fill up with street stalls – plastic tables, plastic stools, noodles and stir fries, bahn mi and tea. On the corner of Hang Giay, one restaurant really packs it in. Bit Tet Hai Ty encompasses two side of the street, with customers packed into narrow spaces and motorbikes whizzing past. Most order a basket of bread and cucumber salad, before digging into plates of shiny birds and stir-fried vegetables. After a series of stops at other stands, all we could stuff in was a plate of the suon ran or pork ribs covered with fried lemongrass. Bring handiwipes.
